Spicy Pecan Apple with Cranberry Pie

1 cup unbleached all-purpose flour Crust

1 teaspoons salt Crust

2 tablespoons sugar Crust

12 tablespoons cold, unsalted butter, cut into 1/4-inch slices Crust

0.5 cup cold vegetable shortening or lard, cut into 4 pieces Crust

0.25 cup cold vodka Crust

0.25 cup cold water Crust

4 cup tart apples, sliced 1/8 in thick (transparency, pink lady, or granny smith) Filling

0.5 cup dried cranberries Filling

1 cup roasted pecans, chopped Filling

1 teaspoons cinnamon Filling

0.5 teaspoons chipotle chili powder Filling

0.5 teaspoons salt Filling

1.5 cup brown sugar Filling

9 tablespoons tapioca flour Filling

4 tablespoons butter diced Filling

0.5 cup apple cider for cranberries Filling

0.5 cup whole pecans roasted Topping

4 ounces cream cheese, softened Whipped Topping

3 tablespoons powdered sugar Whipped Topping

1 cup heavy whipping cream Whipped Topping

1 teaspoons vanilla Whipped Topping


Step 1: Crust

Mix flour, salt, and sugar together. Add shortening and mix until crumbly (should look like streusel topping).

Pour liquid over flour mixer and mix until well blended (slightly tacky and sticks together).

Divide dough into 2 equal balls and flatten to make a 4-inch disc. Wrap each disc in plastic wrap and refrigerate at least 45 mins or up to 2 days.

Roll out to fit desired pie plate. **The vodka stops gluten from being created so the dough can be handled longer.

Roasting Pecans

Preheat oven to 350 F. Measure 1 cup chopped pecans and 1/2 cup whole pecans onto a jelly roll or pizza pan and roast 15 minutes in a 350 F oven. Remove and let cool.

Step 5: Crust

Spray pie plate bottom with cooking spray. Take 1 pie crust for the bottom and roll 1/4 chopped pecans into it. Lay it in the pie plate.

Peel, core, and slice apples. Keep covered with lemon water until ready to use.

Measure 1-1/2 cups dried cranberries into bowl and let sit in the apple cider for 1/2 hour or longer.

Add 1/2 cup pecans into mix. Add cinnamon, chipotle, salt, brown sugar, butter and tapioca into mixing bowl. Add drained apples to mixture as well.

Pour mixture into pie shell and spread evenly. The pie should round nicely. Sprinkle top with leftover 1/4 cup nuts.

Cover with the 2nd pie crust and spray with water. Sprinkle top with cinnamon sugar and decorate with whole roasted pecans. Poke crust with knife to let out steam.


Bake 450 F for 10 mins then turn down oven to 350 F and bake for 1 hour or until golden brown. Remove from oven and cool. This is very good with either whipped topping or ice cream.

With electric handheld mixer on medium speed, beat cream cheese, sugar, and vanilla until smooth, about 30 seconds.

Step 2: Whipped Topping

With mixer running, add cream slowly to prevent splashing and whip until stiff peaks form, about 2 mins. Serve pie with topping on top or on the side.
