Before you get started

Zesty Vegetable Curry Soup Recipe
This soup packs such a powerful flavor punch, you won’t believe that it’s actually fairly healthy. It’s also quick and easy enough to whip up on a “school night” if you’re pressed for time, and it makes a great appetizer when hosting vegetarian or vegan guests. So it’s up first in our soup recipes!
2 tbsp cooking oil
1 jalapeño pepper, seeded and minced
1 large onion, diced
2 carrots, chopped
2 celery ribs, chopped
3 garlic cloves, chopped
2/3-inch piece of fresh ginger, peeled and minced
2 tbsp curry powder
1½ tbsp garam masala powder
1 quart vegetable stock
1/2 tsp salt
24 oz. coconut milk
3 tbsp cilantro, roughly chopped
½ lb. mushrooms, sliced
1 small eggplant, cut into 1″ pieces
1 small head broccoli, cut into small florets
1 red bell pepper, chopped
1 zucchini, chopped
Step 1 – In a large heavy bottomed pot over medium heat add olive oil and heat for 1 minute. Add onions, celery, carrots and jalapeños and cook until vegetables are tender.
Step 2 – Add the garlic and ginger and cook for 2-3 more minutes. Add the curry and garam masala and stir until fragrant.
Step 3 – Add the coconut milk, vegetable stock and salt, and stir well. Add the remaining ingredients and simmer for 30 minutes. Add salt and/or pepper as needed. Serve warm, topped with cilantro or green onions and a flat bread such as naan on the side.
Hearty Slow-Cooker Chicken & Wild Rice Soup Recipe
You want a soup that’s absolutely delicious and stupid-easy to make, too? Well, you’ve come to the right place. Read on…
14 – 18 oz. chicken breast
1 small onion, finely chopped
2 celery stalks, sliced
2 carrots, sliced
2 garlic cloves, minced
1-1/2 tsp salt
1/2 tsp pepper
1/4 tsp dried ground sage
1/2 tsp dried thyme
Small dash of rosemary, crushed
2/3 cup wild rice-brown rice blend
2 bay leaves
2 Tbsp butter
1-1/2 quarts chicken broth
Step 1 – Add ALL of the ingredients into your slow-cooker and cook on LOW for 4-5 hours.
Step 2 – Shred the chicken with a pair of forks, then stir back into the soup. Cook for an additional 20-30 minutes, then serve.
Ultimate Tortellini Soup Recipe
This soup brings a lot of bold Italian flavor that warms the soul on a chilly evening. It’s hearty enough to serve as a main course, and it makes a favorable impression when you bring it along to a potluck get-together… you’ll be bringing an empty pot back home, guaranteed!
16 oz. mild Italian sausage, casings removed
1 medium onion, chopped
6 garlic cloves, minced
1 quart chicken stock
1 large can (28 oz.) of tomato puree
1 tsp salt
½ tsp pepper
1 bunch of kale, stems removed and leaves roughly chopped
1 package (9 to 12 oz.) of fresh tortellini
¼ teaspoon red pepper flakes (optional)
Parmesan cheese, grated for serving
Step 1 – Over medium-high heat, cook the sausage, onions, and garlic for about 5-6 minutes. Break up the sausage as it browns. Drain off excess fat, if necessary.
Step 2 – Stir in the chicken stock and tomatoes, and bring to a low boil and add the salt and pepper. Reduce the heat and simmer, uncovered, until slightly reduced, about 15 minutes. Stir in the kale, tortellini, and red pepper flakes (if using) and cook until the kale is wilted and the tortellini is tender, 3-5 minutes.
Step 3 – Serve with grated parmesan on top and enjoy!
