The cool crisp air is upon us and so is the season for apple picking. Bringing home a bushel of golden apples to cook up is a delightful way to say hello to the fall weather. From the orchard to the stove top, these are my top ten favorite apple recipes to please anyone’s palate. Happy Eating!

Apple Brandy Cinnamon Pancakes

  • Ingredients:
  • 1 cup sifted flour
  • 2 Tbsp. light brown sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • ¾ cup milk
  • ¼ cup applesauce
  • 1 egg
  • 2 Gala apples, peeled and diced
  • 1 Tbsp. light brown sugar
  • 1 tsp. cinnamon
  • 1 Tbsp. butter
  • 1 Tbsp. apple brandy
  • Whipped cream
  • Cinnamon

Directions:
In a medium bowl, stir together the dry ingredients. In a separate small bowl, whisk together the egg, milk, and applesauce. Add to the dried ingredients and mix well. Set aside.

In a large, non-stick sauté pan, heat 1 Tbsp. butter and 1 Tbsp. light brown sugar over medium heat. Toss in apples and cinnamon then cook for 2 minutes. Pull the sauté pan off the heat and add the brandy. Let it cook down or you can flambé it. Just be careful not to have the bottle next to the stove. Reduce the mixture for 2 more minutes then pour into a bowl. Wipe out the sauté pan and add a pat of butter. Spoon a large dollop of pancake mix onto the heated sauté pan and cook until they begin to bubble. Flip and cook for about 1-2 more minutes. Repeat with remaining batter.

To serve, stack the pancakes then top with apple brandy mixture, whipped cream, and a sprinkle of cinnamon. Serve.
