Years ago during Easter mom used to make a deliciousness known as fanesca.
Fanesca is this magical soup traditional to Ecuador (where I was born) that brings back memories of grandma and traditions. Every year around Easter grandma’s house would be filled with the entire family who would gather to eat fanesca. Mom is one of 13 siblings so when I say the entire family…I mean a full house. Making fanesca is not a simple task it requires a lot of ingredients, patience and time.
While I can’t remember the last time I ate fanesca; it’s been a while since I’ve traded this soup for matzo. I do remember how happy I felt to see granny (she passed away in 2005). No matter what you are celebrating this weekend, make sure to give grandma a hug.
